Winemaking :

Date of grape harvest if optimum maturity and overmature in years when climatic conditions permit.
Cuvaisoon, maceration, about 25 days with pigeage (extraction by sinking the hat of marc twice a day during the fermentation).

Breeding :

13 months in oak barrels with stirring of lees once a week.

Taste :

An intense dress with violet highlights.
The ripe, powerful nose exhibits aromas topped with red fruits mixed with spicy and toasted notes.
The mouth reveals a rich wine with a beautiful complexity.
A wine of guard par excellence.

Aging :

10 to 15 years

Accompaniment : :

Take in jug 2 hours before serving, it will marry perfectly with tasty meats, lamb legs and other game (Salmi of goshawks, deer, wild boar ...).

Winemaking :

Harvest date at optimum maturity, set by analytical and taste controls.
Traditional vinification carried out in separate stainless steel vats, variety by variety with temperature control during fermentation. Maceration 15 to 21 days which allows to extract all the potential of the 2 grape varieties while keeping a supple but fleshy structure.

Breeding :

from 12 to 18 months in vats with periodic racking to eliminate natural deposits.

Taste :

A Cahors with a deep garnet color.
Intense energy dominated by aromas of red fruits and spices.
Round palate with silky tannins, aftertaste.

Aging :

5 to 10 years depending on the vintage

Accompaniment : :

Serve at 16-17 ° C.
Paired with red meats, confits, duck breasts, game and flavorful cheeses.

Fruity first and foremost for this perfectly balanced rosé with aromas of strawberries and spices.

This cuvée traces the history of Cahors wine and its emblematic grape variety, Malbec. The pilgrims of St Jacques de Compostelle passing through Cahors helped to make it known throughout the Middle Ages.

85% Malbec et 15% Merlot

Winemaking :

Maceration 17 to 20 days in stainless steel vats with temperature control and programmed pumping over, shedding allowing the gentle extraction of all the qualitative elements

Breeding :


Aging continues in cement vats coated with epoxy resin or stainless steel vats associated with micro-oxygenation to soften the tannins.

Taste :

Beautiful ruby ​​red color, fine and elegant wine with scents of black berries, blackberries and scents of undergrowth. Very well balanced between finesse and tannins

Can be kept 8 to 10 years
